Vegan Chickpea Salad

Crunchy, quick, tasty, vegan!

Chickpeas definitley belong on our list of all-time favourites. They are packed with plantbased protein and incredibly versatile. We love them in burger patties, curries, cakes, biscuits and salads.

This is also a great dish to take to work/uni/school the next day.


Drain chickpeas and wash them.

Chop tomatos, cucumber and onion into small cubes and mix with the chickpeas.

Add a generous dash of olive oil, coriander leaves and season with salt and pepper.

Done - That's it!

  • 1 small red onion
  • 1/2 a bunch of coriander
